November 17-26--Family

Hey folks...I'm sorry I missed the last 9 days of posting. We were in Idaho visiting our amazing family, and were having so much fun! 

For this reason, I am simply putting a bit post today.  I am thankful for every single member of our family, both sides.  You are all amazing!!

Yesterday, we lost Trevor's Granddaddy Pete Gregory. He was so wonderful.  I was able to meet him on 3 occasions (more than we thought I would be able to).  Trevor loves him so much, and we will miss him.

Our family in Texas, we love you all so much as well, you are so wonderful, and I hope we can spend some extra time together while we are all in the state.

Distance is something that is difficult with family, and as I have said many times before, you can make 1 mile seem as though it is 2000 miles, and 2000 miles seem like 1 mile.....It all depends on communication.  We have learned that over the last 7 months.  I am going to be making lots of calls, and texts to simply say hi from now on.  We love Face-Time with the kids, and simple phone calls are wonderful! 

So, for the last 9 days, I am so thankful for my family!

November 16- Food

Today, I am thankful for food...If you know me, you know I love me some food! :)  I am a great cook, and enjoy learning new recipes, and being a hostess.  Most of my vacations revolve around what I want to eat.

This morning, I am sitting here waiting for Trevor to wake up, and my stomach is rumbling...I'm starving!! We will be going to breakfast in just a few hours, and I don't really have anything here to eat right now, so I am just trying to keep myself busy until then.

November 15- Home town

Today, I am thankful for having a home town.  Trevor and I grew up in 2 small towns that are about 120 miles apart.  I love going to Rigby to see my mom, and always feel safe and warm there.  Soda Springs is where Trevor's mom lives, and where he grew up.  Since going to Soda Springs the first time 7 years ago, I loved it.  Soda is also very warm and safe feeling.

When I think about home in Idaho, I think of warm summer days, and a ton of snow in the winter!

Seattle, Washington is also like a home town to me as well, because it is where I became who I am today.  I instantly fell in love with the city, and felt right at home.

Of course Trevor is my home now, and I will follow him anywhere, there is always a soft spot in my heart for Rigby.  As for now, Houston is where our homestead is now, and we love it.

November 14-ease of the net

Today, I am thankful for the Internet.  It makes it super easy to get things done, and get the answers I need.  It also helped me to save money today on a rental car we will be needing next week! :) 

Internet lets me watch TV and movies, play, chat with friends, and so much more!  I don't know how I ever got through without it! LOL.. these days we have internet everywhere with our smart phones, tablets, and all other devices!

As long as I have internet I can do anything!! LOL :)

November 13- Extended Family

Today, I am thankful for all my Aunts, Uncles, and Cousins.  I am lucky to have so many amazing blood relatives!  Some I grew up close to, and some I haven't really had a chance to get to know. 

I have amazing Aunts and Uncles that have always been supportive of me, and for that I am grateful.  I am very proud of my amazing cousins out there, who are rocking this big world!

No matter where we are, or what we do, I know that we will always be there for each other.

November 12- Nieces and Nephews

Today, I am thankful for my nieces and nephews.  I have 18 nieces and nephews total.  I gained nine when I married Trevor, two were born after we were married.  Eight come from my brothers and sister. Unfortunately I haven't been able to be apart of my sister's kids lives, however, I still love them very much.

Being an Aunt is so wonderful.  We don't have kids of our own, so our nieces and nephews are a huge part of our lives.  Each of them bring a smile to my face by simply looking at pictures, or talking to them on the phone, and especially when we get to meet with them.

Thank you to the kids that are in our life. :)

November 11- Veterans day

Today, as with every day, I am thankful for our Veterans.  To be free, we have to fight for it, and we have brave men and women who go out and risk their lives for that freedom.

When I was in school, and choir we would go each year to sing to the veterans in the homes, and I always got emotional.  I have family members who fought, and were hurt in combat, and those who came home with issues, like my father did from Vietnam. 

We can't say thank you to these men and women enough, or be grateful enough that they were able to come home safely.  I pray everyday for those who are active in duty, and on the front line.  We thank you.

Sadly, too many young men and women die for our freedom, and we can't have days like today, celebrating those who survived, without remember those who didn't get to come home. 

Once again, we thank you for your service.

November 10-Thankful for the little things

Every day I try to be thankful for all the little things in my life that combined together make for a pretty awesome existence!  Trevor takes such good care of me, and does so many small things to just get a smile on my face.

The smallest gesture from a friend or family member can make or break your day, and that is something I am trying to remember to be thankful for the good and the bad. 

I'm thankful that I have running water, and it even gets hot at the touch of a button! Air Conditioning, and heating depending on how I am feeling! :)  The blankets I have that I can either kick off, or grab and bundle up in.  Time that I get to spend with those who matter to me.

Later today, I'm sure I will be thankful for pain medication...

November 9-Patience is a virtue

Today, I am thankful for patience...granted I have a hard time with this.  Trevor and I compliment each other really well on this one.  When I am struggling to be patient, he is so good at keeping his cool, and helping me; and, on the flip side, when he is about to flip, I can help him with keeping calm.

This morning I had a dentist appointment, and we spend more time waiting to see the accounts manager regarding how much it will cost us for the work I need done than the time it took to see the dentist, do xrays, and talk with the hygienist combined!  Trevor and I took turns being frustrated about the wait, but we got through it without losing our cools! :)

November 8--My brother's Wives....

Today, I am thankful the women who have married my brothers....  After so much term oil yesterday, due to an argument with one of my sisters in law, I had take some time to think about both of the women that my brothers have married.  They have both been married twice, and to be honest, I couldn't stand either of their first wives.  I was young, and at one point had to live with each of them. 

My oldest brother Rocky married Kristina 9 years ago.  The first time I met her was at Grandma Elsie's funeral.  She was very kind, and sweet to my family, and has since helped so much in their time of need, and that is what we have needed.  I love her very much.  They have the cutest little man Rocky Dennis, I was very lucky to meet him right after he was born, and he makes me smile every time I see him, or a picture of his smiling face.  Kristina and I are a lot alike, considering that we are both VERY strong minded people, and if we think we are right, we usually are!! :)  This has caused a few fights between us, but what is family without fights. I have so much respect for her, considering she puts up with my grumpy old man brother! :)  In all honesty, he is a great guy, and he has a great gal.

Sam is my other brother, he married Krista I think a little over 9 years ago.  Krista is so much like Sam, very quiet, and keeps to herself.  We are currently in an argument I guess you would say... She didn't like what I had to say about the election, and felt attacked by my comments (I'm sorry you feel that way...I didn't mean to make you feel attacked).  She de-friended me on facebook, and wrote on her blog about how she felt.  I still love her, and am forever grateful for how well she takes care of my baby brother...  Without her, I wouldn't have 3 adorable nephews who are so full of energy, and you can't help but smile when they are going nuts around the family.

Family is about unconditional love.  I hope that Krista and I can overcome the issues we have with one another, because I know my mother would like to have everyone get along, and so would I.  We have so much distance in miles between us, I would hate to have more distance in our hearts.

November 7- The right to be me!

I am thankful today that I can be myself, I'm a big girl, who can make her own decisions,  and if you have a problem with it, then, that is your personal issue and quite frankly, you can go to hell. :)

Yesterday was the Presidential Election.  I spent most of the night watching the polls close, and the announcements read.  It upset me that so many people were blatantly racist, and quite simply rude on their comments on social networking sights.  Sadly, some of these were friends, or relatives of mine.

I voted for Obama, and I still stand behind him.  Yes, he has made a few mistakes, and no, he hasn't kept some of his promises yet, but I have faith.  People will always complain about the President, I'm sure I would be complaining right now if it was Romney as the President-Elect. 

To say as I've seen so many people say, "Obama has screwed us", I don't really think this is right to say.  How can one person screw billions?  The thing is, he can't make anything happen with out Congress and the Senate behind him.

Yes, our economy isn't the best right now, but it is far better than it was in March 2008, when my husband was laid off for 6 months, and we had to fight for food stamps, and unemployment.  Flash Forward to the year 2011, Trevor made more than he did the whole year of 2008, and he only worked 1.5 months of the year, and was Laid off for 6 months, and on workers comp the 4.5 months.

There have been cuts in spending across the board, and the people whose spending has been cut are upset, and blame Obama, but he is trying to help the big picture here, that was shattered over 8 years under Bush.  You might not be able to see that, and I know it is hard when your pay is cut, or whatever issues you may have.

In 4 years, we will have another chance to fight about who is better to run our country, I can only hope and pray that we can all get along, and see others points of view.

On another note, I was very pleased to see that 3 states have passed Marriage Equality.  I hope and pray that this is something that will soon sweep the nation.  I can't imagine being told I didn't have the right to marry the love of my life.

While I have my own personal views on abortion, I definitely was happy to see that the 2 candidates who made the stupid comments about pregnancy by rape being gods plan, and the other comments, were not Elected.  A woman should always have rights over her own body, regardless of my beliefs, or anyone else's, it is her decision.

If you don't like what I have written here today, that is okay.  You don't have to read anything else I write on my blog, I will survive without a reader or two.

November 6-Right to vote!

Today I am thankful for my right to vote.  I will be voting tonight at 6pm, when Trevor gets home from work.  I will be voting for 4 more years with Obama as our president.

I am voting the way I am because I do my research.  Everyone should do their own research on their candidates.  Don't vote solely on the fact that your parents, spouse, celebs, papers, news tells you who you should vote for.  Of course these are great options to use in your research, just use your brain.

I have friends who are republican, and democrats. I love them all the same way.  I'm just proud of them for making up their own minds.

November 5- Friends..."sisters"

Today, I am thankful for my best friends.  I have several great friends in my life, and I am very lucky for that.  I have 3 that are closer than "friends" they are my sisters.

Emily Merrill has been my friends since we were 4 years old, so, that is the last 28 years of my life she has been there.  I am 4 days older than her.  We were attached at the hip as kids.  There have been months where we haven't spoken, but when we talk, or get together, it is as though not a moment has passed.  She is my sister, always has been, always will be.

Kristina Beba and I have been friends since we were 11, so, again, that is 21 years!  Wow, Tina, our relationship is old enough to drink! :) Kristina is 11 days older than I am, and I don't let her forget it. :) Tina was there for me through the roughest parts of my life, when I didn't speak to anyone in my family other than my mother.  We have had times where we hated eachother, but deep down, even if we never mentioned it, we always loved one another.  Once again, like Emily, she is my sister, always and forever.

Angela Sorensen is very special to me.  She is the first person I called a Bit#%.  I'm pretty sure I got in quite a bit of trouble over that one.  It bonded us immediately. :)  Angela is 2 years younger than I am, however, we were inseperable for several years. 

Girls, thank you for always being there to support me, even when we didn't see eye to eye.  I will always cherish our friendships.

November 4-Brothers

Today, I am thankful for my big brothers.  I have two, who are amazing!  We have had our ups and downs, but they are always there when I need them, and that is very important.

Rocky, is the oldest, he gives me a hard time, and is really the only other person other than Trevor who can get away with giving me so much crap.

Sam is two years older than me.  He is very kind, and loving.

We might not be as close as other families, however, that doesn't mean we don't love each other just as much.

Thank you big brothers for being there for me when I have needed you, even if I didn't think I did. :)

November 3- Mom

Today, I am thankful for my mom.  She has always been there for me no matter the distance.  I talk to her at lease 5-6 times a week, sometimes twice a day. 

I am very thankful for her, I really couldn't ask for a better mom.  She is the closest friend I have besides Trevor.

I remember times when I was in school, probably 10 or so, mom would come into the room, and say, "oh, you don't look so good, maybe you should stay home today...." And, we would play hookie, and relax at home, or do so many fun things!  I have so many great memories of her, and I am thankful for every moment we can spend together.

She will be coming to Texas in February for a few weeks, and I am so excited to show her around!

November 2-Weekends!!

Today, I am thankful for WEEKENDS! 

Most of our lives are spent at work, or being busy doing so many things.  I start my countdown Monday morning when I get Trevor off to work....I hate the work week!  Granted, I am lucky to get to stay home, and I keep quite  busy doing different things all week, but I miss my husband when he is away anywhere from 12-16 hours a day all week!

Sometimes we don't get a weekend, because he has to work, but when he does have a weekend, we usually are up to something.  This weekend, however, we have no plans, other than being lazy around the house.  Trevor has a cold, and he needs rest to get better.

On our weekends, we usually make some type of yummy breakfast, and then argue as to what to have for lunch and dinner... (We both hate deciding this)  So, usually we will take turns deciding....

Life is amazing when you have someone special to spend your time with...Too bad the weekends aren't 4 days, and work week 3 days! :)

November 1st--What I'm thankful for....

Today is the first day of November, and as always, I have so many things to be thankful for!  My goal for this month is to write a short entry of what I am thankful for that day....I have 30 days of this....So, here we go!

November 1st, I'm thankful for my husband Trevor.  I'm thankful for him every day of my life!  He has totally changed my life, and made it so much better.

Trevor is sweet, caring, funny, talented, hard working, and most importantly he is my husband!  Trevor has brought so much into my life that I will always be thankful for him.  He does anything, and everything for me, and takes such good care of me.

Every day is an adventure with Trevor.  He is my best friend, and I will always follow him wherever he goes. 

So, Trevor Donley Gregory, THANK YOU for being my husband, and best friend!

October Challenge Recap!!

Well, with 22 crock pot meals throughout the month of October, I met my challenge of doing 5 meals a week! I'm so very proud, and excited!!

Now, trying to figure out what to do for the November challenge....I'm not sure it is going to be a cooking challenge, rather than a blog challenge....

On Facebook several friends do a "what I'm thankful for" status each day.  I'm going to do a blog about what I am thankful for each day. I am very excited about trying this out, we will be seeing family, and that is always something to be thankful for!

Day 31-chicken tortillas

This was a combination of ideas from Trevor and myself.

1 lb chicken
1 can black beans (drain & rinse)
1 can diced tomatoes and chilies
1 can tomato sauce
2 cups frozen corn
1 cup water

You can add taco seasoning or chili seasoning for additional flavor.

Put together in the crock pot on low for 5-6 hours.

Serve with Spanish Rice and tortillas. Yum!! :)

Day 30-Italian Soup

I had pulled some hamburger out of the freezer yesterday, however, I had no idea what to do with it!!  So, I looked through the blogs I follow, and the magazine I bought about Crock pot cooking, but nothing really interested me....

So, I looked through the pantry and found a few options....everything is pretty much in half for us, if you have more to feed, just double this recipe!! :)

1/2 lb burger(browned with salt/pepper)
1/2 onion(cook with burger)
1 tsp Italian seasonings
1/2 tsp garlic salt
1 can black beans
1 can kidney beans
1 can Italian style diced tomatoes
2 cups beef broth

Put all in the crock pot cook for 5-6 hours on low....

Day 29- Chicken with Veggies and Gravy

I've noticed that every post almost starts the exact same.... Sort of funny....they all say it is YUMMY, and EASY! :)  They all are amazing, and yummy, and incredibly easy!

Today, I wanted something that is sort of like Chicken n Dumplings, and Chicken noodle soupish....so, I looked in my fridge, and pantry so that I didn't have to make a trip to the store....

2 chicken breast
1 can cream of chicken
1.5 cups chicken broth
dash of pepper
1 cup chopped celery
1 cup chopped carrots
1 cup chopped onion

Place the veggies in the bottom of the crock pot with the chicken on top. Sprinkle with the pepper, place chicken on top.  In a bowl mix the cream of chicken and broth, and pour over top the chicken.  Cook on high for 4 hours. Remove chicken and chop into bite size pieces, and mix back into crock pot.

At that time, you will want to cook the biscuits, or rolls.  I'm doing regular Pillsbury biscuits.

Day 28- Crock Pot Beans and Rice

This is one of our favorites! Usually I cook it 1-2 times a year on the stove, but I wanted to try it in the crock pot..... I cooked it all day, about 12 hours, but it was ready at about 8 hours....So YUMMY.....

That is the thing about crock pots that I love, if you have it on Low, you can cook it additional time without really messing it up, or if it seems ready before you are, you can keep it on warm, or you had speed it up on High.....

1 can pinto beans, (I soaked them over night, however, you don't have to if you rinse them before putting them in the crock pot, it just may take a bit of time.)

1 onion
1 ham hock, or ham steak...I did both

Serve over rice. So AMAZING!! :)

Day 26- Crockpot Brisket

I started this early this morning at 5 am!  It smells so good! The brisket was about 2 pounds, and I put Italian seasoning and pepper on both sides and rubbed it in.  As well as making holes in it, and putting full cloves of garlic in it.  I put about 10 in. 

This will be cooked on low about 10 hours.  It will be served with mashed potatoes, and some type of veggies, and rolls.

Day 25- Spaghetti and meatballs

Store bough meatballs, very tasty, and easy again.....

Spaghetti sauce, with the meatballs cook on low for 2-3 hours. Cook noodles, and serve. very easy!! :)

Day 24- Tex Mex Chicken with black beans and rice

As I have said many times I totally love cooking with my Crock Pot! :)  It is so easy to make dinner!!

The black bean and rice part of this meal is very easy, cook the rice by regular directions, and warm up the black beans Mix them together and serve as a side, or inside the tortillas.

Tex Mex Chicken-

3 Chicken breasts
1 taco packet
1 can diced tomatoes
1 can tomato sauce
1 cup water

Combine all ingredients except chicken and mix together well, add chicken breast, and let cook for 4-5 hours on low, or 2-3 hours on high.

Serve either over the rice, on the side, or shredded and in tortillas with regular taco toppings.

Day 23 -French Dips

1/2 lb roast beef slices
1 Ajus sauce (either packet, or liquid made by directions on packet)

Place in crock pot on low for 2 hours

Rolls , swiss cheese, mushrooms and onions (grilled if you want)

So many options for sides.  We did Fried Okra.

Day 21- Crock pot Italian Chicken

Yumm!! And again so easy!!

Chicken breasts (frozen or fresh)
1 bottle Italian dressing
1 can green beans (drained)
1 can new potatoes (drained)

Put in crock pot for 4 hours on low.

We ha this with rolls and rice.

Day 20- Crock pot steak

This is super easy... Steak in a creamy sauce made into gravy over mashed potatoes... Yumm!! Served with roasted Brussels sprouts and rolls!

Roasted Brussels sprouts

We are trying this for the first time.....

14 Brussels sprouts
3 tbsp olive oil
1 tsp salt
1/5 tsp pepper

Put into plastic bag and shake to get well coated. Bake 45 minutes shaking pan every 7 minutes....

Day 18- Pineapple Chicken

Yummy!! I absolutely am loving this month of Crock Pot meals! so easy!!

This one is really, REALLY easy!!

Chicken (again, how much depends on who your feeding...)
1 can crushed/chunky pineapple(juice and all)
frozen, or fresh veggies of your choice (I did broccoli and cauliflower)
1/4 cup soy sauce
1 tbsp worchestire sauce
if you need to cover the chicken a little more, add up to 1 cup water

Cook in crock pot for 4 hours on low. Add the veggies.

Serve over rice.

Day 17- Crock Pot Chili

Chili -

1 package chili seasonings
1 lb burger
1 can kidney beans
1 can crushed tomatoes
1 can tomato paste

brown burger and put everything in the crock pot cook on low for 4 hours.  Top with favorite toppings such as sour cream, cheese, onion, and whatever.

Also serving with corn bread! Yummy!

Day 16- Creamy Chicken

This is so yummy, and simple.... Lately, I have been into simple meals. :) 

Start off with Chicken Breasts fresh or frozen
     (enough to feed however many people you need)
1 can cream of chicken soup
salt/pepper to taste

Put in crock pot cook 4 hours on high, or 6 hours on low.

I am going to serve with corn bread, and Broccoli Rice a Roni.

Day 14- Chicken Noodle Soup

Yummy!! My favorite! And, so easy to make in the Crockpot!

2 chicken breast(you can also do rotisserie chicken)
2 cans chicken Broth
1 cup chopped carrots
1 cup chopped celery
1 tsp garlic
1 cup water
Salt pepper to taste
Cook on low for 6 hours add noodles cook on high for 15 minutes.

So yummy!! :)

Day 12 - Fried Rice

I was very nervous about this one...because of the last 2 dinners not turning out, but this is so yummy, I've already had a few spoonfuls...lol...

2 cups rice
2 carrots diced
1 cup frozen peas
2 tbsp Soy Sauce
2 tbsp worchestershire sauce
1 egg
choose a meat, if you have left over chicken, or ham, dice it up, and add it.
salt and pepper to taste

Put every thing in the crock pot, and mix together.  Cook on low for 4-5 hours, or high for 2-3.

Day 11- Left over Thursday!! :)

Left overs are inevitable when you are cooking for 2! :)  Normally we don't have a left over night, because Trevor doesn't usually like leftovers....I hate just throwing them out, so we decided to pick a night a week to have a free for all! :)  It will be fun!!

Day 10- Baked Pasta...(Crock Pot)

Okay, so this needs a little tweaking....Not sure what to do to make it better...I was nervous trying this, because I have never cooked a pasta dish in the crock pot....The recipe called for rinsing the pasta with water for added moisture(I cooked it for 6 minutes because I didn't want it to be crunchy. The pasta turned out way over done) So, I will have to try again next time....

Recipe:
as much pasta as you want rinse with water(remember it doubles in size, so be careful :))
1 Jar/can of Spaghetti sauce
1lb burger/chicken
1 cup cheese

put in half the pasta, sauce, meat, and cheese  top with the rest.  cook on low for 4 hours.

I will be trying this again at some point. If you try it, please let me know how it turns out.... :)

Day 9 - Cabbage and Potatoes

 I am not a cooked Cabbage fan, however, Trevor is, so I thought, hey, lets give this a shot....Well, we did, and Trevor didn't like it.  The following is the recipe that I followed....We think it would be best to add 2 tbsp of water, and wait for the vinegar for personal use.
Cabbage cut in quarters
4 potatoes cut
1/4 c olive oil
2 tbsp balsamic vinegar
5-6 cloves of garlic
Salt and pepper to taste

Put in crock pot on high for 4-6 hours

I'm serving with baked chicken.

Day 8- 16 Bean Soup(Crock Pot Style!)

Welcome to Monday....start of the second week of my October Challenge... :)  After an eventful weekend, I found myself with the start of a cold yesterday, so I didn't want to do much, and luckily I had a quick easy crock pot dinner yesterday.  I decided to go ahead and search for my menu options for the coming week.

16 Bean Soup (Crock Pot Style)

I had found this idea on Pinterest, and had never heard of, or found this in the grocery store, so I was instantly curious if I could find it. 

It is a bag of 16 bean soup...It has the beans, and all you have to do is either add the pouch of ingredients, or make up your own yummy seasonings.  The original recipe doesn't call for meat, however, Trevor is a meat eater, and gets frustrated when I don't cook meat for dinner, so I added some ham to the ingredients.

I opted to do my own seasonings:

1 bag 16 bean soup
1 pouch onion soup mix
1 can diced tomatoes (juice too)
1 onion
1 lb black forest ham
Water to cover beans

Prep:
This was very easy to prep. I started the night before, sorted the beans to make sure there wasn't anything odd in them, and put them in a pot and covered with water, 2 inches above beans.  covered them and left them on the stove over night.  In the morning, I drained the beans, and rinsed them.  I put them in the crock pot with all the other ingredients and left it on low.  Cook on low for 6-8 hours (the longer the better mine was in for 10 hours, the longer it cooks, the better it tastes).

I will serve with Texas Toast.  Enjoy! :)

Day 7 - Crock Pot Beef

This is such an easy Sunday dinner.  I thought of this last night, we have had this a few times before, but I did it a little different tonight.  You can do any type of beef, I have used Roast, steak, and cubed beef. 

1 lb Beef(whatever type you want)
1 pkg Brown Gravy mix
2 Cups water
1/2 Onion

Put all in the crock pot on Low for 8 hours, or High for 4 hours.  Serve with your favorite sides, we will be having mashed potatoes, and green beans.

Day 4 -Crock Pot Minestrone

This smells AWESOME!!! :)

2 cans Chicken Broth
1 can Corn
1 can Italian stewed tomatoes
2 cans whatever type of beans you like (I did Black and Red Kidney Beans)
1/2 bag Broccoli and Cauliflower (frozen)

Put in crock pot and cook 4 hours on high or 8 hours on low.

Day 3 - Crock Pot Country Chicken

Day 1, and 2 of October Challenge!!

Hey all! Welcome to October!  As I stated in my previous post, my October challenge is crock pot month!!

Day 1 Monday-- Sliders
Wasn't a crock pot day, Trevor loves the sliders at Chili's, but we don't eat there, because of horrible customer service at a few locations.... So, I found a recipe for them, and tweaked it for us!

Burger (depending on how many sliders you want to make, I did 1/2lb)
Heavy Cream(Add as much as you want, I used 2 tablespoons)
Seasonings(up to you)
Swiss Cheese
Slider Burger Buns
Diced Mushrooms(up to you)
Diced Onion
1-2 tbsp Butter
Favorite toppings

Mix burger, seasonings, cream make patties about 1/4 cup. Saute the mushrooms and onion in butter.  Cook Burgers, when they are almost done put a little mushrooms and onion on top of each with some swiss cheese.

Sides for this dish are quite easy as well, you can pretty much have whatever you want.  I steamed Broccoli and Cauliflower with a little butter.

Day 2 Tuesday-- Lazy Pork chops(Crock pot)
I chose a marinade for some pork chops I had in the Freezer.  I always have a hard time choosing marinades, this one was Garlic and Cracked Pepper. 

I marinaded them in the fridge overnight.  At noon I put them in the crock pot on HIGH with all the marinade and left them for 3 hours.  Depending on how many chops you are cooking you may need a longer cook time, I only made 2 chops for us.  I flipped them over and turned to LOW.

The sides for this dish: rolls, mashed potatoes, and green beans.

September Challenge Over, onto October!

Well, I would have to say that my September Challenge can be considered a success!

We ate out 5 times throughout the month, which is way better than our usual 8-10 times!

I enjoyed it so much, that I wanted to do another challenge for October, I have been thinking of what to do for the last few days, and decided that my new October Challenge will be Crock Pot meals for 5 our of 7 days!

We will be having a Date night each Saturday as well.

Day 28- Italian Chicken Bake

Italian chicken bake, so easy, and yummy!

2 chicken Breast sliced
1 can Green beans
1 can New Potatoes
1 cube melted butter
1 packet of Italian Dressing Seasoning mix

Place Chicken Breast in middle of casserole dish, put potatoes, and green beans on each side of the chicken.  Sprinkle the dressing mix over the dish, cover with the melted butter.

Cover and Bake at 350 degrees for 1 hour

Day 27- Stew over mashed potatoes

Trevor loves Stew, and I am always trying to find different ways to prepare it.  This was very good.

Stew Meat (Browned in frying pan)
1 cup carrots
1 cup celery
1/2 cup onion
1 cup peas (frozen or canned)
1 can beef broth
1/2 tbsp Parsley
1/2 tbsp Thyme
1 clove garlic
1/2 cup water

Put all ingredients except for peas in the crock pot on high for 4-5 hours.  Add peas 15 minutes before serving.
Prepare Mashed Potatoes (prepare either instant, or regular)

Day 25- BBQ Pulled Pork

This was really good. I used Pork Chops. I put them in the crock pot with BBQ sauce for 4 hours on low. Then, I pulled them out and shredded the pork and put it back in for an hour. I served with Mashed Potatoes, green beans, and toast.

Day 24- Taco Salad

Taco salad is so simple, yet do good! You can't go wrong. Pile on your favorite veggies, sour cream, meat, and black beans with some tortilla and you have an amazing dinner!! :)

Menu for Last week of September

Well, we have come up to our last week of September. I didn't do as well as I wanted to as far as cooking every meal, however, we did cut out a lot of eating out, so that makes it a success.  I am going to be working on a few ideas for an October Challenge, I'm not exactly sure what I want to do with that yet, I am thinking that maybe it will be something to do with my Crock pot, like every meal, or 5 meals a week out of it...not exactly sure yet. :)

Day 23 - Birthday dinner

Last night, Trevor and I went out to a wonderful dinner at a wonderful restauraunt to celebrate my birthday.  They treated us like royalty, and even complimented us with a slice of chocolate cake with a candle!  I must say, it was a wonderful night.

Day 20- Crock Pot Chicken

This was called Forgotten Chicken on the recipe I started, but I changed it up a little, so I changed the name. :)

Ingredients:

1 can Corn (drained)
1 can Kidney beans (drained)
1 can Black beans (drained)
1 can Diced tomatoes
1 can Chicken broth
2 cups Water
2 tablespoons flour
1 packet Taco Seasoning
2-3 Chicken Breasts

Open cans and place in crock pot.  Pour taco seasoning into the mixture, and blend.  Add chicken Broth and water, and mix.  Place Chicken broth on top of the mixture, making sure they are covered by the liquid.  Cook on high for 4-6 hours.  Take chicken out and shred and mix back into the mix.

Serve with favorite toppings, sour cream, shredded cheese, and tortilla chips.

Day 19- Cheese and Potato Casserole

Cheese and Potato Casserole
 
 
  • 3 cups potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper  
  • 2 cups shredded cheese
  • 1 kielbasa sausage
  • 1/8 teaspoon paprika
  •  
    Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown.
    Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss.
    Mix all remaining ingredients (except for 1/2 cup shredded cheddar cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly.).
    Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top.
    Bake in preheated 350°F oven for 35-45 minutes (watch, until golden brown on top).

    Week 3 Menu

    Hey all, sorry that I didn't get the menu up on Saturday, I had a crazy weekend, Friday was a disaster with our cable that took all afternoon to fix, so we ended up ordering Pizza, and Saturday Trevor had to work, so my day was crazy.  Sunday night I had planned on making Hawaiian Chicken, but the chicken I had set out seemed to smell funny, so I didn't want to chance it, so again we went out...(UGH) 

    Anyways, so here is the Menu for this week, I am still including what we had on Monday and Today.

    Day 18 -Spaghetti and Meat Balls

    This was a very simple dinner, with regular Spaghetti noodles, and Prego Roasted Garlic Sauce, Along with the left over Meatballs from last week.  I topped it with shredded cheese.  Very tasty.

    Day 17 - Hawiian Chicken

    Hawaiian chicken was so easy to make, and very yummy.  I put 2 chicken breast into the crock pot with 1 can Pineapple chunks with juice and 1 bottle of Hawaiian BBQ Marinade.  I let it cook for 5 hours, and then added Broccoli, cauliflower, and carrots.  I topped it with Swiss cheese and let it melt.  Served over rice.

    Day 15 -Corn Chowder

    Corn chowder is an amazing fall dinner that I love to make, because it is so easy to do. 

    10 oz Frozen corn
    1 large onion, diced
    1 1/2 lbs baby red potatoes, cut into 1/4 inch pieces
    6 oz bacon, chopped
    4 cloves garlic, minced
    4-5 tablespoons flour
    2 tablespoons unsalted butter
    1-2 tablespoons olive oil
    6 cups chicken stock
    2 cups milk
    1 cup heavy cream
    2 tablespoons minced parsley
    2 teaspoons minced thyme
    1 heaping tablespoon sugar
    salt and pepper to taste

    Chop the bacon into smaller pieces.  In a large stock pot or dutch oven,  cook bacon until most of the fat has rendered off and it is starting to get crispy, about 6-8 minutes. Remove the bacon and set aside. Reduce heat to low and add the onions and butter. Cover and cook until onions have softened, stirring occasionally, about 12 minutes.

    Add the garlic and saute for 1-2 minutes. Make a roux by sprinkling the flour over the onions and whisk for a minute or two until the flour has heated and is combined with the butter and onions. Slowly whisk in the stock and bring to a simmer.

    Add the potatoes, seasonings, whole milk, and 1/2 the cooked bacon(saving some for topping). Bring back to a simmer and cook over low heat for about 15-20 minutes, until potatoes are nice and tender. Add the corn and heavy cream, bring to a simmer again, and cook until corn kernels are tender, about 5-10 minutes. Serve topped with the chopped bacon and even some grated cheese.

    Day 13 - Baked Meat Balls

    Incredible Baked Meatballs
     
    1lb hamburger, 2 eggs, beaten with 1/2 cup milk, 1/2 cup grated Parmesan , 1 cup panko or bread crumbs, 1 small onion, minced, 2 cloves garlic, minced, 1/2 teaspoon oregano, 1 teaspoon salt, freshly ground pepper to taste, 1/4 cup minced fresh basil Mix all ingredients with hands. Form into golfball sized meatballs. Bake at 350 degrees for 30 minutes.

    Day 12 - Crock Pot Ribs

    These were quite easy to do.  You can either do a rib rack, or boneless ribs.  I chose boneless ribs, because I don't like to eat meat off the bone. 

    2 lbs Ribs
    1 bottle BBQ sauce (You decide on Flavor)
    1/2 tablespoon worchestire sauce
    1 cup water

    In a container with a lid put the ribs, BBQ sauce, worchestire sauce, and water.  Mix together, and place in the refrigerator overnight to marinate.  In the morning, put contents into the crock pot.  Cook on Low for about 8 hours.
    Choose your sides.  We had Green Beans, Fried Okra, Coleslaw, and French Bread.  If you try this, let me know what you think!

    Day 11 -Beef stew

    Tonight we had beef stew. So amazing, and easy!  Here is the recipe.

    Beef Stew:
    Chop (1) Onion and Chop
    (2) Cloves of Garlic
    1lb stew meat
    (2) whole carrots chopped
    (2) celery stalks chopped
    (3) Red Potatoes chopped
    (1) can diced tomatoes 
    (1) cup frozen green beans
    (1/2)TBSP Worcestershire
    (1/2) cup Beef Broth
    (1) TBSP Parsley
    (1) tsp Basil
    1/2 tsp Thyme
    (1/2) tsp salt
    (1/2) tsp pepper
    (1) TBSP Sugar
    *Brown meat with garlic and onion in skillet
    *Place in Crockpot with 1.5 cups of water and 15 oz Beef Broth. Cook on LOW 8 Hours.

    Day 10 - Chicken Cordon Bleu Casserole

    Okay, so this was a bit of a dud....too much salt...I followed the directions, but I guess that's the way it goes.
    The following recipe is how I should have done it:
    2-3 chicken breasts cubed and cooked with pepper, and a dash of garlic powder.
    4 slices Swiss cheese
    2 cups cubed ham
    2 cups cooked rice
    1 can cream of chicken
    1/4 cup milk
    1/4 cup sour cream
    2 cups crushed crackers
    In 8x8 pan spread rice, next layer is te chicken, next Swiss cheese, next ham, next mix cream of chicken with milk and sour cream place over the ham, top with crackers.
    Bake at 350 degrees for 20-30 minutes

    Week 2 Grocery Shopping

    I went grocery shopping today, and did very well, I stuck to my list, and stayed at budget $75.98...I know it is .98 over budget, but, I haven't been using a budget to grocery shop for the past few months, so this was actually a great start!  I think I forgot about the difference between tax in Idaho, and Texas! LOL.

    I am also doing a correction to my Menu for the week.  While putting groceries away, I noticed that I still had ham that needs to be used, and some Swiss cheese as well, so I will be making the Chicken Cordon Bleu Casserole tonight, and the Crock Pot ribs on Wednesday!  I will make the correction on my Menu post.

    Day 9 - Mini chicken pot pies

    Today we had a very easy meal. Mini pot pies, which actually are corn muffins with meat and veggies inside. I was nervous that they might be gooey inside, however they were really good. The only thing we should have done was to top them with chicken gravy. We had sweet potatoes, but I forgot to take a picture of them.



    All you need is:
    1 package corn muffin mix (small bag or box will do depending on how many muffins you want)
    2-3 breast of chicken
    8 oz frozen broccoli
    8 oz frozen corn
    (you can use any type of veggies you think would be tasty)
    1/2 cup shredded cheese
    1/2 cup chicken broth
    1 Tspn Italian seasoning
    1 clove garlic minced
    Salt and pepper to taste

    Cook chicken with garlic in skillet, add broth, broccoli, corn, and seasoning. Summer for 10 minutes, strain out broth (keep for topping/dip or gravy, add cheese to chicken mix. Preheat oven to 425 degrees. Mix muffin mix as directed on package. Grease muffin pan, put a Tspn of muffin mix into each muffin add 1/4 cup of chicken filling. Cover each muffin with muffin mix. Cook for 20 minutes or until golden brown.

    September 3 - Southwest Chicken Egg Rolls and Tostadas

    Hey guys! So, day 3 has been amazing!  I had planned on doing Southwest egg rolls and Ham and Swiss Crescents, however, the egg roll recipe was huge, for the 2 of us it would have been way too much food.  I put the left over filling on a corn tortilla shell and topped with cheese and tomatoes.  Trevor dipped his Egg rolls in Salsa, and I did Peppercorn Ranch.  AMAZING!! :)



    Recipe: Southwest Egg rolls-
    3Cups             Chicken breast
    8oz                Frozen Corn
    1can              Black Beans
    1/2                Red Bell Pepper Diced
    1/2Cup           Green onion diced
    1/2tsp            Cumin
    1/2tsp            Parsley
    1/2tsp            Pepper
    1/2tsp            Garlic
    4-6                  Flour Tortillas
    -Preheat oven to 350 degrees.
    -Mix all ingredients together in a skillet.  Cook 5 minutes.  Set out tortilla shells put a few spoonfuls into the shell and roll up like a burrito.  To close you can use toothpicks to hold shut.
    -Place on a cookie sheet.  Cook 5 minutes, flip over, and cook additional 5 minutes or until golden brown.

    September 2 - Fresh Atlantic Tilapia and Salmon

    Today was an amazing day with my husband.  We found a great price on Salmon, and Tilapia (a cheaper version of Halibut.)

    Preheat oven to 300 Degrees.  Both Tilapia and Salmon were prepared the same way.  Six slices of Lemon put on a piece of aluminum foil (Salmon was placed skin side down) top with Garlic Powder, Salt, and Pepper along with desired amount of butter.  Fold the foil covering the meat.  Place on a cookie sheet.  Cook for 25-35 minutes depending on how big the slices are.


    Sides are pretty easy to decide on for these.  We made Asparagus, and Mashed Red Potatoes.  We really enjoyed this meal, and I am so excited to continue on our challenge.

    Summer Sunday Dinner!!

    Sunday is a day of relaxation, and getting ready for the week ahead... Today we decided to bake breaded chicken strips, and have Macaroni salad and marinated cucumber/tomatoes as sides. This is very light, and tastes amazing!

    We are getting very excited about starting the new menu for September, and have a huge list of ideas!

    Easy weekend dinner--frozen dinner options...

    When I think frozen dinner a square thin box of cardboard tv dinner comes to mind. Over the past few years, several companies have came out with dinner options for a family, or single people, rarely do you see something for 2.
    While at the grocery store today, Trevor suggested an easy dinner for tonight, so we went down the frozen section, and came across these P.F. Chang's options. This will be the first time we have tried this brand, and I'm very excited. I also made a quick cup of rice to go with it.

    This was so very good! Under $10.00 for dinner is amazing!! I will definitely be trying the other options with this brand!!

    Menu ideas

    So many options for making or buying Menu Boards.  I had planned on making a menu board, however, the costs for me were adding up quickly (since we moved 1700 miles from home, I had to leave behind my craft supplies for a bit) I would have had to buy every supply to make this....So, for me, it was easier to just buy a dry erase weekly calendar.  I found it at Target for $6.00 it came with magnets to put it on the fridge, however, I purchased the command Velcro to put it on the wall, and I will be able to easily remove it to change it each week.








     
    Here is a picture of the dry erase board I purchased.

    This is a picture of my friends boards.  They are 11x13 picture frames, with scrapbook paper in them, along with clothes pins for the days of the week, crayon boxes cut in half for the boxes to hold the menu options used/unused.

    I have also viewed several other options on the web, and strongly recommend you find one that fits what you like.  Once I get my supplies from Idaho, I will be making a Menu for us.

    September Challenge...Re-Vamped...

    My 2 bestest friends, Kristina, and Angela, are going to be joining me for the September challenge, and we may end up with others joining us on this journey!  With the suggestions from Tina, and Ang, we will be having the allowance of 6 meals (3 Dinners, 3 Lunches) total allowed all month.  I will be sharing pictures and recipes on this blog, as well as sharing on Facebook as well.

    Tomorrow, I will be making a menu board, and I will share a how to on here for that as well...(Thanks Tina!)  I look forward to seeing how the challenge goes, and hopefully you will decide to join us.

    Easy Creamy Chicken Enchiladas

    Hey all, so, I found this on Pintrest, and it is so Yummy, here is the information on it...You should totally try it, so easy and good!!

    Ingredients
    • 6-8 corn tortillas (enchilada size)
    • 1 pre-cooked plain rotisserie chicken, shredded
    • 1 cup sweet corn
    • 4 cups shredded Mexican blend cheese, divided in half
    • 3 tablespoons butter
    • 3 tablespoons all purpose flour
    • 1-1/4 cups chicken broth
    • 1 – 10oz can cream of chicken soup
    • 1 cup sour cream
    • 1 – 4oz can chopped green chiles
    • 1/4 teaspoon ground black pepper
    • 1/4 teaspoon sea salt
    Instructions
    1. Preheat oven to 350 degrees F.
    2. Fill the center of each tortilla with a handful of shredded chicken, a tablespoon or so of the corn, and a pinch of the shredded cheese.
    3. Roll and place in the bottom of a baking dish with the seam side down.
    4. In a pot over medium heat melt the better. Add flour and whisk into a thick paste.
    5. Add chicken broth, cream of chicken, sour cream, chiles, salt and pepper.
    6. Whisk gently for about 5 minutes until warm and smooth.
    7. Pour the sauce over the enchiladas and top with remaining shredded cheese.
    8. Bake for 25 to 30 minutes and serve warm.

    Well, I've decided to get back into blogging.... After 1.5 years of no blogs, I have a few things to catch up on....

    First, we will start with the present....Trevor and I moved over 1700 Miles!  Our new home is in Houston, Texas.  We came here for work.  Trevor is now a Superintendent with a Industrial construction company.  We now have a 2 bedroom 1.5 bath town home, and are enjoying life...Granted, the change in weather has been crazy! :)

    We just celebrated our 6 year anniversary, and life just keeps getting better, and better. 

    I'm planning on doing a few blogs a month, about things that interest me, and of course big events in our life!  I hope you all tag along on the adventures of the old married couple!! :)
